I was hesitant to buy these shoes because I have really high arches and I'd read that they are pretty flat. They are, kind of like converse- but I just got some insoles made for high arches and now I love them. They take a couple days to get used to- the first day I wore them was a 12-hour shift and my feet were dying. So take the transition slow. Once you get them broken in they are great. I've had them for 3 or so months and they are still going strong, not really any signs of wear and tear. They are water-resistant and crazy slip-proof. I literally ran through a huge puddle of water they other day after our baine marie overflowed and didn't have to worry about falling. With the inserts, they are very comfortable. They're sturdy, slip-on, and they don't have that rubber clown-shoe look like most chef shoes do. The only other problem is that they are slightly difficult to clean. The laces are just for looks but the added structural details where the laces are make it not as easy to clean thoroughly.
